5 Ways to Make a Better Ice Cream Sandwich + A Giveaway!

When you think of summer, chances are, you think of ice cream sandwiches: finger tips sticky with cookie bits and ice cream melting down your hand.

Today, we're bringing on ice cream sandwich expert Natasha Case, co-founder of Coolhaus Ice Cream, to share some of her expert sandwich building tips -- plus, we're giving away 2 copies of the new Coolhaus Ice Cream Book

Ice cream sandwiches are clearly one of our favorite foods here at Coolhaus Architecturally-Inspired Ice Cream. So in anticipation of summer's arrival, we thought we'd share some of our insider tips on how to make the best possible ice cream sandwiches. Now, you'll have the knowledge you need to be the architect of your own dessert and blow your friends and family away. 

1. When you scoop your ice cream, make sure it's as frozen as possible. Since the sandwich will take a minute or two to devour, the ice cream will soften as you're partaking; it's better that you start with conservatively frozen ice cream, rather than conservatively soft. It's also okay to scoop the sandwich, then freeze it. Don't worry, the cookie won't harden -- it will actually get softer as it absorbs the moisture of the ice cream. 

2. Think about how the cookie and ice cream flavor profiles interact! Ice cream sandwiches are a great way to deconstruct other desserts, or even savory dishes. For example, a peanut butter and jelly ice cream sandwich could be a peanut butter cookie with strawberry ice cream; lemon meringue could mean a macaron and Meyer lemon ice cream. We always say the "sushi sandwich" is a ginger-molasses cookie with wasabi ice cream...be playful with your combinations!

3. Make sure the cookie is chewy and pliable, but also soft. This way when you bite into the ice cream sandwich, the cookie will bend to your bite but still hold onto the ice cream in the center. You want it soft enough that you can bite through and have that perfect textural experience.

4. Don't bake the cookie too thick, and be sure to smoosh down the top cookie when the sandwich is complete. You need to be able to fit the whole sandwich in your mouth -- make sure it's humanly possible!

5. Find the un-sweet flavors to balance the dessert. With two cookies and a scoop of ice cream, there is potential for a lot of sweet here. In our opinion, the way to counterbalance that is to highlight the other palate sensations: salty, savory, smoky, boozy, tart, and so on. These layers will make the treat so much more complex, and will let you devour a whole sandwich without risking a sugar overdose.

Snickerdoodle Cookies 

16 tablespoons unsalted butter 
1 1/2 cups plus 3 tablespoons granulated sugar 
1 teaspoon natural vanilla extract 
3 eggs 
1 teaspoon ground cinnamon
1 teaspoon cream of tartar
1/4 teaspoon baking soda

4 cups whole milk
1 1/2 cups white granulated sugar
8 large egg yolks
12 to 14 strawberries
1 tablespoon white granulated sugar

Hellooo! I have never tried this combination, mostly because I live in an old apartment with a gas oven and every cookie I make comes out black, but my fabourite ice cream cookie combo WOULD be coconut oatmeal cookies with dark chocolate cherry ice cream. Yum.

i love the classic chocolate chip cookies with vanilla ice cream in the middle, and if it's rolled in chocolate chips that's even better! i also love to switch up the ice cream though, mint chocolate chip is my favorite!

Love Coolhaus -- was there last week when in LA -- had an amazing gluten free cookie sandwich filled with a whiskey gingersnap ice cream - sooo goood!!! They have amazingly, unique flavors of ice cream - and you can taste before buying - yum!

I always look for easier ways to do things - how about slicing the ice cream the appropriate thickness with a hot knife, and sandwiching cookies. If the cookies are rolled - cut them to the appropriate square size and bake that way.

That ice cream sandwich looks awesome! I have to say I love the macaron ice cream sandwiches at Jeni's...giant soft macarons on the outside, ice cream on the inside. The chocolate-hazelnut ice cream with hazelnut macarons version is amazing.

This is one of those recipes/concepts that just blows the store-bought version out of the water, as in once you have a homemade ice cream sammy it is actually impossible to enjoy anything else. And, LOVE the ginger cookie/green tea combo mentioned below!
