14 Pies for Fall (A.K.A. Pie Season)

Pie holds a special place in our hearts all year long, but if there ever was a month for pies to shine, November would be it. We may have nearly three weeks to daydream about which ones will make it to the table on Thanksgiving, but that doesn't mean we can't do a few trial runs along the way. We think it's completely reasonable to practice on as many pies as possible—those apples aren't going to cook themselves into a warm, buttery crust, after all. Whether you stick with the classics or experiment with something new, grab a fork and dig in: It's time for pie.

Apple Cranberry with a crumb topping and Pecan for Thanksgiving, plus either pumpkin custard or sweet potato custard made with honey or sorghum for the non-sugar eaters

1) Apple-cranberry with a brown sugar streusal topping 2) Bittman's chocolate pecan 3)? still up in the air... maybe something in the citrus family, to please all comers.. I'd like to try a Shaker lemon pie but not sure I can get the lemons this time of year.

I'm making Mr T a pecan pie . . . probably the one I've made him since I was a new bride, a long, long time ago ( https://food52.com/recipes/2330-mr-t-s-pecan-pie ), although Alice Medrich's Chocolate Pecan Pie is pretty amazing. It's from her "Seriously Bitter Sweet," one of my favorite modern dessert cookbooks. The recipe is here: http://www.mercurynews.com/recipes/ci_24458165/recipe-chocolate-pecan-pie

And then I'll be making a non-dairy version of Hillary Pollak's Bourbon Pumpkin Pie, https://food52.com/recipes/31635-bourbon-pumpkin-pie , using coconut milk and homemade ginger snaps.

The mixed apple and masala pear pies linked above both look so enticing, however, that I'll probably make one of each of those for other desserts -- and those all-important pie breakfasts -- over the holiday weekend. I'll turn the pear one into a galette, however, because my family greatly prefers a high filling to crust ratio. ;o)

Salty honey pie from Joy the Baker (originally from Four and Twenty Blackbirds, I believe). I'm even making it for Thanksgiving this year because it's just so good.
