8 Dinners that Make Great Leftovers

January  6, 2015

December is a hectic month. We expend so much energy on hosting and attending parties, gift shopping, and dressing up, that come January, we're -- for lack of a better word -- done.

It's the perfect time to focus on meals that work overtime -- the ones that taste great for dinner and even better the next day at lunchtime. If you resolved to eat better (however you may define that) or spend less money in 2015, these menus are a great start: They're two-for-one deals that ensure you'll eat well for days. Could there be a smarter, more efficient way to begin a new year?

I love to repurpose tonight's dinner for tomorrow's lunch. My favorite methods are using leftover roasted vegetables or soup toppings in salads, or spooning chunky soups into baked sweet potatoes. And of course leftover roasted chicken is a lifesaver.
