These are absolutely delicious! I was so proud to take them to a
Christmas gathering and I told everyone it was my first try at caramels. Toast the pumpkin seeds well,they have more flavor. Follow the directions perfectly and be careful and patient! ENJOY!

Beautiful! I know some people have said that they are too soft at 240 degrees. I usually cook my caramels to 250. Are these supposed to be softer than usual?
And, why the addition of the lemon juice?

I tried 250 an they were rock hard. I think it may be the addition of the pumpkin that slows the temperature rise? The lemon juice brightens the pumpkin flavor, I think anyway.

These were amazing!! I roasted my own pumpkin and it didn't wasn't too watery. Great recipe, I brought them into work and everyone is asking for the recipe!
