If Indian food isn't already in your cooking rotation, making it for the first time can be intimidating. Many of the spices and ingredients might be outside of your cooking comfort zone, but it's exactly those ingredients that make it such a delicious and unique cuisine. There may even be a scientific reason for why Indian food is so addicting: The ingredients in Indian and many South Asian dishes often have opposing flavor combinations, while most other cuisines rely heavily on pairing ingredients with those that have agreeable flavors. Our tastebuds love the zing of so many flavors battling for attention in our mouths at once. So pick up some pav bhaji masala and turmeric and set to work on these 10 Indian staple recipes:

A good selection of dishes here for easy cooking. The flavours are more from the south of India and have a very fresh and clean taste. Predominately sour and made with coconut, which are two distinctive south Indian tastes.

I began Indian cooking 2 years ago when I discovered Alamelu Vairavan's cooking show on PBS (http://www.mptv.org/localshows/alamelu/) - she makes it so easy. You can watch all her episodes at mptv.org. My favorites are the sambhars and poriyals. My only challenge is finding all the ingredients (especially certain spices and dals)...

Frozen Naan from Trader Joe's is great. I just heat it in the oven until hot. The outside gets just a little crispy.

Traditionally it is cooked in a clay pot over wood fire and takes few hours to get it done.
