Tasso Gumbo Gravy  Smokey Creamy Chorizo Gravy

This looks a lot like Mother's, don't you think? That would make sense, given that she really is the Grand Master of Angst-Free Cooking!! (I can see her, rollling her eyes, saying, "Angst? Are you kidding? Over gravy?!" or something like that.) ;o)
