The Best CSA Share So Far (& What We Did with It)

Have you been following along as we cook from our CSA share? Today we got the best bounty yet!

This week, we really hit the jackpot with our Local Roots' CSA share: fava beans, turnips, peaches, and a loaf of bread? What did we do to deserve this? (We also got the usual—though still wonderful—suspects: cucumber, squash, and collard greens.)

With our stomachs rumbling, we decided to make not one salad (that would be boring! and predictable!) but two salads. Shocking, right? 

Introducing salad #1: blanched fava beans, thinly sliced cucumber, chunks of peaches, and strips of red onion. Caroline made a dressing out of horseradish leaf, the juice of a lemon, a clove of garlic, "one little shallot," a little honey, and olive oil.

And don't forget salad #2: sautéed collards, pan-fried the squash, julienned raw turnips, and black beans expertly cooked by Amanda.

Nothing fancy happened with the delicious bread. That was too good to mess with.

I used my squash to make tortillas for tacos!
Shred squash, add breadcrumbs, spices, and an egg.
Form flat pancakes on baking sheet and bake until set.
I filled my squash tortillas with a red lentil spread and chili/sesame pickled cukes!

We had local honey in our share this time and it is wonderful.

I've been roasting my fava beans with olive oil and garam masala for a snack and topping salads with it. That swiss health bread from Orwashers Bakery though....good with anything. Maybe a fava bean spread on the bread?
