Aside from loving spring rolls, you don't need much of a reason to make them—but that doesn't mean there aren't a million reasons why you should. Spring rolls are some of the easiest, most convenient, and gosh-darn cutest lunches around. They're self-contained, they're super flavorful, and you can stuff them with just about anything that's fresh. This week, KatieQ and her friend Jandra teach us to make Cambodian-style spring rolls. Once you've mastered them, try out a Vietnamese version, and then pack them for your next in-flight meal.

I make them often in the spring and summer, and am grateful to the cooks who have made them among the most oft-saved of my recipes on the site. They always take me back to my son's early years.
