Hope you end up liking the wheatberries. They are a chewy grain. Farro would also be a good sub if you don't.

I am going to give the Apple Bacon Salad with Honey Balsamic a try because I have all the ingredients on hand and we are in the middle of yet another snow storm. Love to cook and bake when stuck inside!
