Our Latest Contest: Your Favorite Way to Eat Eggs for Dinner

April 25, 2016

We all have a favorite last-minute, home-alone, don't-really-want-to-cook-today dinner: cold cereal, piece after piece of buttered bread, whatever sundry can of beans we have lingering in the pantry. But in our heart of hearts, we're devoted to the truly miraculous, endlessly adaptable, good-on-everything egg. Where would we be without it? We don't even want to think about it.

Yes, a fried egg is a winning anytime dinner, but eggs have transcended the world of the last-minute, home-alone meal: We're planning ahead to make them, sharing them with friends. Hello, shakshuka! Hello, shakshuka focaccia! Hello, eggy tacos, risotto with an egg nestled squarely in the center, quiche of our dreams!

And our latest contest is devoted to the topic: What's your favorite way to eat eggs for dinner?

Poached and laid down on a nest of kale and pancetta and breadcrumbs? Yep, yep, yep. Photo by James Ransom
