my best pudding is one I just ate and didn't make. there is, however, a recipe for it. it's dahlia narvaez's (she's the pastry chef at Osteria/Pizzeria Mozza), so would be ineligible for this contest. still, i want to share it, since it was printed in the NYT: http://www.nytimes.com/2007/05/09/dining/091mrex.html?_r=1&scp=1&sq=Budino%20Mozza&st=cse

Amanda, So what shd we exclude when we make the pudding, rice, bread...??

In the contest description we said it should be "thickened with egg, cornstarch, tapioca, or gelatin; boiled or baked -- but hold off on any bread, rice and steamed puddings for now." So no rice, and I'd say no bread either. We're thinking of custard-y puddings. Thanks for asking!

Would mousse be acceptable, or not pudding-y enough??

As long as the base of the mousse is thickened in some way, and not just lightened with whipped cream and/or egg whites.

Great theme! I admit I was hoping for something less calorie dense after fondue week. My waistline is sure to grow an inch!
