Chipotle, Chorizo & Dark Beer Fondue  Kissing Cousins: Raclette Fondue

Any food52 member is welcome to help us test our Editors' Pick candidates, so go call dibs on the recipe you'd like to test in the comments section below! We'd love to see some new testers in the mix. Don't forget to email us your notes (about 100 words) to [email protected] by next Tuesday at 5pm.

We'll collect your comments, decide the official list of Editors' Picks and publish your evaluation in the headnote if the recipe is selected as an Editors' Pick (with credit, of course!). And even if the recipe you test isn't chosen as an Editors' Pick, please feel free to leave your testing notes in the recipe's comments section. Constructive criticism is always encouraged!

I'd love to test Fondue Truffles. It was on my short list.

I could triple up and test the Chocolate and Bacon recipe ... :)

Table9 February 26, 2011
Thanks wssmom! I know my recipe is out-of-the-box, but I promise you will love it!

I would really love to test a fondue this week, but I just don't think I can get it done before the review deadline. (Work, work, work - always cutting into my food52 time!) Looks like Fondue Truffles and Chocolate and Ancho Chile-Bacon are left. Please, please, someone test these! They both sound sooooo good.

I was sooo running late today and delighted to find some of my favorite-sounding recipes still available! Is it kosher to test two? I'd love to try Auld Lang Syne Fondue and Peppered New England Thyme Fondue ... but will gracefully (or, not so gracefully!) acquiese (did I spell that right?) to others!!

wssmom February 24, 2011
acquiesce, I was close!

Sagegreen February 25, 2011
I won't be able to test any fondue this week, but am delighted to be among the other ep candidates! This list is so interesting. Thanks for the nomination, editors. If you do test mine, wssmom, I hope you like it!

Food52 February 26, 2011
How nice of you to offer! Usually we only allow one recipe per tester for the first pass, but if there are still some unclaimed ones after 24 hours, they're fair game. In this case, we'd say all three are yours if you still want them!

drumsullivan February 25, 2011
Thanks so much Michelle!! Looking forward to your feedback...the original recipe added butter, heavy cream and imported Kirsch at the end, we've done it with and without the imported Kirsch but the butter and heavy cream always seemed unnecessary, more a throwback to an earlier time...my first recipe submission so we have a lot in common!!

Michelle M. February 26, 2011
Thanks for the information. I hope I can find Krisch. I live in the boondocks :) I'm making this tomorrow and plan on eating it while watching the Oscars. I can't wait!

Michelle M. February 26, 2011
I did find the Kirsch. Can you tell me how much to add or do I have to stick with the exact recipe you submitted. No worries either way. Thanks!

Food52 February 27, 2011
Thanks for offering to test, Michelle! Since we consider this a real (i.e. fun but still serious) recipe test and use your results to determine whether a recipe should become an Editors' Pick, we ask that you follow the recipe exactly (or at least tell us what you had to change and why) and send in a review to [email protected], which we'll incorporate into the recipe's headnote if it turns out well. That way, if others try it, they're more likely to have the same results are you! Here are last week's reviews if you'd like to see some examples: http://www.food52.com/blog/1722_editors_picks_citrus_olives Feel free to email us if you have any other questions about the process.

Michelle M. February 27, 2011
Sounds great! I will follow it exactly as it appears. Here I go!
