Thank you, Kitchen Butterfly. Your citrus-cured salmon looks lovely too. Like a gravlax, only lighter and more refreshing. Having grown up with citrus trees in our backyard, I'm a bit of a citrus addict and must add a squirt of lemon to almost everything (except my coffee).

I am a salad lover and this looks divine. The only thing I would do is a a chopped red chilli, but then I love chilli!
