These are one of the best things I've made this year. Mesquite flour also makes awesome pancakes. Seriously, if I could afford it, I'd keep this flour on hand in my kitchen all the time.

I know Rockridge really well, right across from the BART stop. My favorite restaurant, Oliveto is adjacent to the market. But I'm still scratching my head about the notion of mesquite flour---it sounds vile. But I'll take Syronai's suggestion under consideration on the ring thing.

I used to live right near here, too. My favorite coffee was right down the street. Scratching my head along with you, pierino. But the onion rings do sound interesting. Maybe corn muffins?

Ok, I found this on wikipedia: http://en.wikipedia.org/wiki/Mesquite_flour 13% protein puts in near the range of high gluten and whole wheat flours. Perhaps not great for corn muffins unless cut with cake flour to tenderize its tough protein.

I'd just like to note that this mesquite flour makes the most incredible onion rings, especially with Walla Walla sweet onions!
