We love our pizza here at FOOD52, from semolina-based pizza to no-knead dough to a classic Margherita pie. But we'd never encountered anything like this oven-less skillet pizza from ours pals at Serious Eats. Using the conducting power of a steel and aluminum skillet heated to 500 degrees, you can make an entire pizza in just minutes. No wooden peels, heavy stones, or third-generation Itaian pizzaioli needed.
