Too Much Pistachio? It Doesn't Exist

Molly Wizenberg calls it the ideal afternoon cake, but I’m not sure I trust myself not to eat this for breakfast, and for lunch. And, boldly going against the advice of nutritionists everywhere, for dinner too. I’d go as far as to say that it’s the ideal meal.

In response to a reader query on what she eats for lunch, Wizenberg chooses instead, naturally, to tell us about pistachio pound cake. (Her reasoning being that no one wants to read, or to wax poetic, about her repeated consumption of peanut butter sandwiches. Or, as she refers to it, the official midday meal of American first graders.)

In Orangette’s latest blog post, Molly writes charmingly, as she always does, about this cake - citrus-laced, perfectly dense, and studded with no shortage of pistachios. Because, in her words, there’s no such thing as too much pistachio. I’m pretty sure I agree.

I made this yesterday and cut into it last night. No, there is no such thing as too much pistachio, at least not in this recipe. It had just the right hint of citrus, it was moist enough and delicious. So said the manliest of men and the girliest of women. There was a tad bit too much batter that flowed over the pan, but was thankfully mostly caught by the parchment paper. I recommend to everyone that likes pound cake, to try this out. It's a great dessert, and as I can personally affirm, goes very well with your morning coffee.
