Fenugreek: Just Add Greens

We’re always proponents for outside-of-the-box uses for spices, but let’s get back to the cooking: fenugreek takes a break from helping to keep your vegetables fresh, and makes an appearance in a bright, refreshing salad.

Often used in curries and other Indian dishes, the spice has a deep, maple-like scent and an accompanying savory-sweet flavor. We like it in everything from pickles to vegetable purees. Once you've made those, try it in this quick salad with fenugreek-scented goat cheese and bitter arugula. We bet it’d make for a perfect picnic, with a crusty loaf of bread and a bottle of Prosecco.

Iranians braise fenugreek with other herbs, lamb, and black-eyed peas for a delicious stew called ghormeh sabzi -- I've never eaten it plain, though!

Also it has an awesome name in Farsi: shanbalileh!
