Grilled Zucchini Done Right

Zucchini is one of our favorite vegetables to throw on the grill - especially bright green ones straight from the farmers market. They're easy to find and make a fast, simple side for any backyard barbeque. But grilling zucchini just right can be tricky. You slice it too thin, it falls apart. You slice it too thick, it burns without cooking. You marinate it, it's ends up too watery. You don't, it's dry and flavorless. Oh zucchini! Why do you make grilling so difficult for us?

Shop the Story

Luckily, our friends over at Serious Eats have taken the guess work out of grilled zucchini with three recipes sure to get the job done right every time. Try it all dressed up with olives, parsley and lemon in one rendition, or alongside arugula, pecorino and pinenuts in another! We can't wait to fire up our grills and prepare all three recipes. And this time, we know it'll be done right.
