Vegetables are polarizing - you either love 'em or you can't stand 'em. Unfortunately for the haters, they are likely the healthiest food group - and apparently, there are many haters among us, because we, as Americans, are eating roughly half of what we should. On average, Americans eat a little more than a cup of vegetables and half a cup of fruit daily according to a study out of the NPD Group, a market research firm.
We should be eating roughly 2 1/2 cups of vegetables and 2 cups of fruit (for a 2000 calorie diet). So what is holding us back? A variety of things - from issues of access to concerns over cost (although according to an estimate from the Produce for Better Health Foundation it should only cost $2.50 per day).
Getting people to eat more green things is difficult - nobody likes to be told what to eat. But education can be key. If you have the right recipe and are willing to put in a little time, delicious food can be made out of almost any vegetable (For one, try this).

I love nothing more than a summer tomato (maybe add some balsamic, basil, and home-made mozz). In my free-time, I cook, read about cooking, farm, read about farming, and eat. Food is a basic necessity, but good food ought to be a fundamental right.
