It would seem that we’re bored with our everyday herbs. Why use clippings from your herb garden when you can use a tart water fern being developed for space agriculture? Azolla makes basil look positively drab.

Azolla is nutrient rich, it seems to be on steroids (it can double its mass in just a couple of days), and its mossy texture and flavor might just be the next big thing atop burgers. Before you run out to get some - which you can, in garden and aquatic stores - be warned that it’s still unclear how healthy it is for humans to eat. But you’re adventurous, right?
