Savory, Salty Brussels Sprouts

This summer I went through a bit of a grilled Brussels sprouts phase. I was addicted to the smoky flavor of those crispy, flaky leaves, and I found myself pairing them with leftover bacon every time it was around. Charred perfection.

Now grilling season is over and the bacon shortage is terrifying, but Scott Whitman of Sushi Ran has an ingenious recipe to satisfy my umami cravings: Brussels sprouts with kimchi. The fix is in.
