I tested EmilyC's coconut-lime pork and it is fabulously lush. My husband and I used the leftover taco meat to make DIY rice bowls, like at the Chipotle restaurants. We loved the meat that way. I made an extra spicy pineapple salsa, chopped some red onion, fresh corn, lots of cilantro and sour cream. We both thought the meat was better with rice. Second time around I made it (it was popular in my house!), I added a deseeded serrano pepper to the onion and garlic for extra bite.

This has simply got to be the toughest contest ever. How on earth can we choose between two such wonderful choices?! I'm planning an open house later this month. Both of these recipes will be on the menu!! ;o)
 
Took the words right out of my mouth. I spent about 20 minutes just staring at my computer screen and every time I thought I had made my mind about where my vote was going, I had to rethink it! This is going to be a close call, I know it!
