Mousse, for sure. Or curds. Definitely curds. I can eat lemon curd by the spoonful! I'm horrible at making them but I just lovvvvvve them!

Big fat summer berries (strawberry, raspberries, cherries, mulberries, serviceberries, whatever is in season)dunked in dark chocolate mousse (the kind that is made with whipped eggs whites and cream, super fluffy, and has little specks of dark chocolate suspended in the chocolaty chocolate cream egg dream). Now I'm drooling.

I have loved Icebox Cake made with chocolate wafers and whipped cream since my mother made it for me as child. Now, as an adult I serve it with macerated berries to add texture and layers of flavor! It has also led me to exploring other "icebox" treats.

My mom always made "freezer cookies" when I was little, during the hot California summers we suffered without air conditioning. I still make them every summer; they're so easy! You basically melt a bunch of chocolate, peanut butter, and butter together, pour it over quick oats, then drop the mix onto waxed paper in the freezer. Chewy, delicious, and ready after a couple of hours!

living in the south, it's gotta be rice krispie treats with marshmallow creme. You can "jazz" it up with cardamom or cayenne or whatever your little heart desires!

If I'm really lazy and only want something for myself, its that banana 'ice cream' that only calls for frozen bananas but I usually whip up some PB with it too. If I am making something for a crowd, then it would be Faith's no-bake strawberry icebox cake. Thats a surefire crowd pleaser of a desert.

Hands down, those freaky little plops of chocolate and coconut that were a fixture at every church bake sale and school playday in the 1970s. Everyone seems to have their own name for these things--haystacks, macaroons, coconut drops, meltaways.

I obsessed about her recipe for lemon icebox cake posted on the kitchn, finally made the lemon curd, got the graham crackers and whipped it up. A HUGE hit, so sassy and sour in a good way. I would NOT bake my way through each and every recipe. Panna cotta? Mousse? OH, yes!

I am still obsessed with my childhood favorite dessert of dirt cake. I now make it in much smaller batches (no need to feed 20+ kiddos for a birthday party these days)and I tend to add in different sorts of goodies but the gummy worms are still an indulgence I just can't do without!

We belong to a herd-share program and are always looking for new uses for our weekly installment of high-quality milk and cream. For no-bake desserts, we love home made ice cream with Granola. For a new favorite - we save leftover pancakes and waffles and reheat them in the microwave or toaster and top with fresh ricotta and berries - this is so good!

It's a toss up between classic no bake cookies and puppy chow. I just introduced my kids to puppy chow a few months ago (it's naturally gluten-free if you use gf chex cereal) and man were they in heaven! It's been in our kitchen non stop lately :)

Smoooooothies. If I plan ahead I'll chop up fruit and chill or freeze rather than use ice. Milk rounds out the sweet, adds protein and smooths out the texture. I love using Ginger for some kick. I use lots of Ginger. For more sweet, only honey will do because it ties all of the fruit flavors together. I learned these tricks while vacationing in Vieques, Puerto Rico.

Hands down, the best ever, easiest summer dessert: Merrill's old fashioned Summer Pudding: http://food52.com/recipes/13392-berry-summer-pudding I always have nice homemade bread on hand, and bushes loaded with blueberries for a good three months, so it's practical, too! (We sneak in a few dead ripe peaches too, when we have them on hand.) ;o)

pretty much any "ice box pie" as they called them where I grew up in Arkansas. some sort of pudding, whipped cream, maybe some fruit, all in a store-bought shortbread or graham cracker crust.

Well, you can't really beat fresh fruits--melons, mangos, and berries are my favorite summery ones--but if we're talking something that requires a little preparation and impresses family, then lately, my favorite no-bake treat has been passion fruit and dark chocolate truffles (try this recipe: http://mimithorisson.com/2013/02/17/passion-fruit-chocolate-truffles/ ). I made these great bars as a teenager with my best friend that remain my favorite no-bake sweet. We called them peanut butter bars, not sure if they have another name - basically the bottom layer was PB, powdered sugar, and graham crackers, and the top layer was melted chocolate. SO GOOD.

I enjoy taking frozen bananas and putting them into food processor with a bit of peanut butter, some milk, and a dash of vanilla - it comes out like soft-serve ice cream! Add some chocolate syrup and you're set.

My mother's trifle. She used raspberry juice instead of alcohol, typically, and presented it in her footed iittala flora glass bowl, toasted almonds on top!
