A quick way to dry off rinsed berries is to whirl them gently in a paper towel-lined salad spinner. Also, at the farmer's market during strawberry season I try to buy a box from each of the different farmers (usually there are not more than 4). Each microclimate imparts a different flavor and character to the strawberries, and it is impossible to know which farm's will have the best flavor in any given week.
