WHO: Aargersi is a marketing database manager in Austin, Texas -- and a longtime Food52er!

WHAT: The spunkiest cornbread on the block.

HOW: Get your pan hot with some butter and cumin. Make your batter; fold in avocado and corn. Pour it all into the hot pan, and bake.

WHY WE LOVE IT: This is not your sweet, demure, cake-like cornbread. This is cornbread with real personality. The avocados retain their shape and creaminess; they're the perfect contrast to the pleasant heat and coarseness of the cornbread itself. Turns out we love avocados in just about everything -- cornbread included.

Avocado Cornbread by aargersi

Serves one 9-inch round cornbread

1 cup stone ground cornmeal
1/2 cup all purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cayenne pepper (or more if you like spicy -- I do!)
2 teaspoons cumin
6 tablespoons butter
2 tablespoons honey
1 cup buttermilk
1 egg
1 ear corn cut from the cob (about 1 1/2 cups)
1 large ripe avocado in 1/2-inch cubes (about 1 1/2 cups)
Juice from 1/2 lime (about 2 teaspoons)

Its a winner, love it! Followed recipe, used wholemeal flour instead of all purpose flour, worked well. No problems at all. Cant wait to share with friends. Will definitely make again.

If you go to the recipe itself you will see that several people have made it - not sure what went wrong with Dale Farran's - but you do need the acid in the buttermilk to activate the soda, so if you sub another milk you should use powder instead ...

I did use buttermilk. I worried also that the cumin was listed in error. 2 teaspoons is a lot and my cornbread came out quite brown, not like the picture shown. And distinctly tasted of baking soda.

has someone else made this too? I would like to but its a lot of wasted ingredients if it did not taste right..?

I made it according to the recipe, and we really enjoyed it. No weird baking soda taste at all. Not sure what went wrong with the person's who thought it tasted bad. Maybe it's just a personal preference thing?

Something is seriously wrong with this recipe. I think it might be the amount of baking soda. It is all I could taste. A shame because the recipe is appealing but it is a lot of work and it was really pretty bad.

Hi Kristen! UT/OU football game. Huge rivalry. They have kicked our asses in recent history and I don't have a warm fuzzy going into this weekend, but we will at least have good grub! (ps we = UT Longhorns - HOOK 'EM!)
