Some nights, the ones that most often follow busy days, require meals that emerge from pantry ingredients. On those nights, pasta is usually the order of the evening, and the lamb pasta I’ve made here is among my favorites. The generous spoonfuls of warming spices make this a perfect dish as the weather grows colder. 

Penne with Spicy Lamb Sauce

12 ounces penne
?1 tablespoon olive oil
1 shallot, finely chopped?
2 garlic cloves, sliced?
1 pound ground lamb
?1 teaspoon paprika?
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
?1/4 teaspoon cayenne
?1 (15-ounce) can chopped tomatoes
1/4 cup crumbled feta
?1/4 cup torn mint leaves
