Leftovers are an acquired taste. As a child, I hated them—the thought of eating the same thing two nights in a row was unbearable. These days, the less work I have to do and money I have to spend to get food in my mouth, the better. 


Come holiday time, leftovers aren't just practical—they're something to look forward to. Here's how to extend the best meal of the year into a several-day affair: 


Past turkey sandwiches, your Thanksgiving main can be transformed into dinners for the remainder of the week. One of the regular favorites is Turkey Pho, though another spicy, unexpected choice is Turkey Jambalaya. And there's always the decidedly retro Turkey Tetrazzini.
