Urgent! A question about a recipe: Salt Water Sorghum Taffy

Planning to make this today in a food science group with kids, and I noticed that the Fanny Farmer molasses taffy calls for vinegar, maybe to react w/baking soda for lightness. Did you test that b4 opting for cornstarch and glycerin? Is the glycerin necessary? Thanks!

I have seen lots of recipes like you are talking about and they work just fine. The glycerin is in the recipe to give the taffy a soft and creamy mouthfeel so it could be considered optional.
