added over 1 year agoYou could make this with chicken instead of turkey: http://www.food52.com/recipes.... Or you could halve this recipe and use chicken: http://www.food52.com/recipes...
Chicken enchiladas are always delicious...or a whole wheat chicken pot pie made with sautéed onions, carrots, and other root veggies
David Chang's steamed buns - add your chicken, cucumber, scallion, hoisin, and sriracha. sooo good! http://www.seriouseats...
I almost always make chicken noodle or chicken and rice soup with our leftover roast chicken. I take the meat off the bone and turn the carcass into stock (and those little bits of meat that are strained out of the stock go into Jake's (our dog) dinner plate for an added treat. I try not to waste anything!!
Chicken Tacos, Enchiladas, or (my personal favorite) Flautas are a great way to turn leftovers into a meal that looks like it was intended for that all along!
Chicken curry - pick any chicken curry recipe and use your already cooked chicken, and adjust as necessary.
Jane Brody has a great one in her cookbook.
Thanks to all...I ended up adding the chicken to a jar of Alfredo sauce and sauted mushrooms with sliced pimento olives, a little nutmeg, salt & pepper...serving on spinach fettuc
