You could take out the chicken if you want a vegetarian version. Burnt Offerings is a great cook.
My go-to is tart apples, diced (leave the peels on and use a mix of red & green for color), about 1/2 as much diced celery as apples, chopped, salted pecans, mayonnaise (Best Foods/Hellmans or homemade) tweaked with some Dijon mustard to taste, and a scattering of bleu cheese crumbles. S&P to taste. The bleu cheese takes it over the top !
