Lemon curd, which you freeze, and also one of my favorite chocolate chip cookie recipes, Alton Brown's #10, use egg yolks only, so when I have extra I make that and freeze in balls for later, impromptu cookies on demand. :D

An all egg yolk pasta, and if you still have left over yolks make a carbonara sauce to go on top.
