I would advise against using pancake mix since it generally contains leavening agents, and crepe batter is leavened only with eggs. Check out some of these crepe recipes: http://bit.ly/ydGvc5

added over 1 year agoI agree with mtrelaun, crepes contain no leavening, its best to use a crepe recipe. I like Julia Childs, its simple and always have a great outcome.
