You can peel the potatoes the night before and hold them in the fridge covered with cold water...they should be fine.

Sure, you can peel them and keep them submerged in water and stored in the fridge. but may i suggest just washing them thoroughly and cutting them up and adding to the stew with the skin on? the skin is very rich in various nutrients and usually work very well in stews and such where the chunks of potatoes will be left intact (not purred) it's less work for you and more nutricious
