I'm not sure where you are located, but I'm going to take a leap of faith that there's a Whole Foods nearby. They should offer an array of chocolate for you to choose from. Barring that any upscale/gourmet specialty shop should suffice. Brand loyalty by the original author would suggest you use Valrhona.
