A question about a recipe: Hervé This' Chocolate Mousse

I have a question about the recipe "Hervé This' Chocolate Mousse" from Genius Recipes.
I used very bittersweet chocolate. It was too bitter & intense: can we use another kind of chocolate or add sugar at some point? At what point would you add the sugar?

No, you may not add additional sugar. That would affect the outcome. Yes you may use a sweeter chocolate, though you will have to adjust the amount of water downwardly. Keep a close watch and let me know what happens
