Hi, good question. I have read that you should beat a lot of air in, but I don't do much GF baking. I have a friend that has a discussion site for Celaic disease, and it has a recipe section. You might like to post your question there as they get almost 500 visitors a day who are cooking GF. Hopefully someone will be along here to help. You migh also search for GF Dutch Baby or German Pancakes as they are similar to Yorkshire pudding but sweet.
