I asked this earlier. The best answers where some ground up walnuts, or almonds. Or adding a bit more whole wheat flour and just skipping it.

I used ground flax seeds (flax meal) which I had on hand. Bread tasted great and had a good texture, and we all know that flax seeds are healthy, so I guess it worked well.
