Chinese style wheat noodles. They are sold dry or sometimes fresh. They are thin and a little chewy and soak up the sauce nicely.
I like Chinese egg noodles in general, would probably be really delicious with Soy Saucy Chicken.
I tend to think of rice as a more natural pairing with chicken, and I was thinking brown rice, mixed with sauteed scallion would be a nice complement. But some buttered egg noodles might be nice too.
I agree with ATG that brown rice is an excellent choice. I think of pasta as having strong flavors from sauce, or seasonings, while rice can be cooked plain or saute with a little garlic and chopped shiitake mushrooms and rice still doesn't compete with the chicken.
Let me take back that last answer. I took question as 'with chicken', not this special recipe 'Soy Saucy Chicken'. You don't want to put mushrooms in rice if you have it in your chicken. You could try cooked udon noodles which are flour noodles. Harusame and bifun noodles would taste good too.
vermicilli may be an option.
