It's a fresh cheese, so I wouldn't expect it to last much more than a week. Fresh mozzarella is always better when it is eaten . . . well . . . fresh.
I believe the curd will last up to two weeks in the refrigerator. I have also had great success freezing it for later use. Just defrost in the refrigerator overnight and use like fresh. This was first suggested where I took a mozzarella making class and it works great.
