I make a refreshing drink by soaking the seeds in water for an hour or two and then adding sugar to taste and crushed mint leaves.
Legend has it that Mayan long distance runners kept hydrated by drinking chia seeds soaked in water because the seeds retain several times their weight in water. They are also a good source of calcium and protein although high in fat.

Whole Foods offers samples of their organic fruit juices blended with chia seeds. It's pretty good.
