Try chopping the chicken into 1 inch pieces, then heat a 2 tbsp on vegetable oil in a 12" pan. Once oil is smoking, add chilies and ginger cut into 1" strips, saute 1 minute. Add chicken and brown on all sides, add chopped vegetables, salt, saute 5 minutes, add cracked coriander seeds 1 tsp. Once everything is cooked serve over steamed rice and squeeze over a lime wedge.
