Recipe for sun dried tomato jam that doesn't call for chicken broth

Every recipe I have seen for sun dried tomato jam calls for chicken broth. I am making this jam for a friend who is a vegetarian. Does anyone have a great recipe for sun dried tomato jam sans chicken broth?

Better Than Bouillion "No Chicken Base" if pretty freakin' great when vegetable stock just won't do. I swear by it for delicate risotto.

I would just replace the chicken broth with mushroom stock. It's got a nice "meaty" flavor that makes a great sub, and isn't sweet like most veggie stocks. This recipe is fabulous: http://www.epicurious.com/recipes/food/views/Mushroom-Stock-15319
