A question about a recipe: Bacon, Cheddar, Spinach and Tomato Strata

I have a question about step 1 on the recipe "Bacon, Cheddar, Spinach and Tomato Strata" from drbabs. It says:

"Butter an 8 inch square baking dish (or one of equivalent size). " Hey Dr. Babs, or anyone....I want to make this to serve 8-10. If I double the recipe and put it into a 15 x 10-inch pan, would that work? Maybe increase the cooking time by 10 min.?
