You can use most any liquid. Sure, you can use limoncello!

Just adding, the only juice/liquid that you'd have trouble setting is pineapple and kiwi - both fruits contain an enzyme that prevents gelatin from setting. (If you cook the pineapple it neutralizes the enzyme.)
