Merell thanks for responding so quickly. You said one should refrigerate Romano Pecorino and olive oil mix and not leave it out. I know it's kept cold, but even if it is the ageded (9mth) cheese?? Also if you are using real garlic (fresh) with olive oil does that have a shelf life too? Thanks so much. Have recommended your sight to a lot of folks!

Garlic carries a risk of botulism, so you'll want to store in the fridge and use it up within a week.

Yes, you should definitely refrigerate this mixture, even if it was just garlic and olive oil. There's a very dangerous risk of botulism when storing in olive oil at room temperature. Sounds delicious, if stored safely! Here's more info: http://www.fsis.usda.gov...
