Need a Low Prep and low budget appetizer idea

I'm serving asian or southwestern ribs for a potluck party and guests are bringing sides. What can I serve as an appetizer that will be fast to prep and budget friendly, too, other than edamame or bruchetta with different spreads?

Those are an excellent idea! I love them. You can make them ahead and cover with a damp towel in the fridge. Cut them in half before serving on the bias to make it easier to spoon in the dipping sauce. Mint and basil are great in those too...but fresh herb only; if you buy, those might be over budget for submitter.
