Baking, Low fat low carb breakfast?

Eggs en cocotte. Dice 2 tablespoons of leftover chicken, turkey, lobster, soinach, asparagus, combo, whatever low carb, etc. Butter a small ramekin, place diced leftovers in bottom. Pour 1 tbs heavy cream over, season to taste. Crack 1-2 eggs on top, place pat of butter and tbs of cream on top, season. Bake at 400 in a waterbath (small skillet works fine with boiling water) for 12 mins 1 egg, 18 for 2.
