I have a question about the recipe "Salted Pumpkin Caramels" from cheese1227. Is it okay to use half and half instead of the heavy cream?

I wouldn't do it. The fat in the cream is needed to get the proper consistency. I'd be afraid they wouldn't set up properly or they may be grainy in texture.

Thanks! I actually ended up using sour cream and they turned out great.
