A question about a recipe: Wishbone Roast Chicken with Herb Butter

I have a question about the recipe "Wishbone Roast Chicken with Herb Butter" from monkeymom. I'd like to try this instead of turkey for thanksgiving since it'll just be me and my husband. Does this create enough pan drippings to make a gravy?

If you wanted to be safe, you could roast a few extra wings (or other chicken parts you could use for soup or salad later in the week) -- you can never have too much gravy.
