Do you want to use champagne or champagne vinegar? There is a great semi-tutorial article on mustard from Sunset magazine. http://www.sunset.com/food... If you want to use champagne, just replace the beer & omit the turmeric in the Ballpark Beer Mustard. If you want to use champagne vinegar then make the Hot and Tangy Mustard instead.
